As we prepare to follow Chef Stephen on the next step of his culinary journey, here is an insight into our Chef’s gastronomic adventures, so far…

Born in Mumbai, Stephen Gomes is the fourth generation in his family to become a Chef.  He has lived in Cardiff for the past 16 years, where his signature take on traditional Indian recipes has gained him a place among the most respected chefs in the UK.

After training within a variety of five star hotels across Asia, he now utilises his heritage, experience and gastronomic travels to create his unique modern Indian fusion cuisine, with elements of molecular cooking. Renowned for his pioneering take on Indian recipes, Stephen is recognised as being among the first chefs to experiment with natural food science in his dishes.  A true Gastro-physicist at heart, his passion for food and innovation clearly transforms itself in the sensational and unique tastes, textures and presentation of his dishes.

Situated in the vibrant heart of Cardiff Bay, Chef Stephen opened Moksh in 2007.  Recently, honoured with an AA Rosette for Culinary Excellence and identified as “a very progressive restaurant that is always breaking boundaries and representing on a national scale”, Moksh is certainly not your traditional Indian restaurant.  It has a very distinctive concept which blends authentic Indian flavours with contemporary presentation, to provide diners with a culinary experience that will not easily be forgotten.

As Stephen always say “with the right infusion of flavours food could, and should, be magical.”

As the very first Indian Chef in Wales to receive an AA Rosette and to be named Ethnic Chef of the Year at the Craft Guild of Chef’s awards in 2015, being recognised for his contributions within the Industry is certainly not a new concept. Previously named as Welsh Chef of the Year at the Welsh Curry Awards in 2014 and English Chef of the Year at the English Curry Awards 2013, he has also been conferred the title of Best Indian Chef in the UK, by the Cobra Good Curry Guide, for the best part of the last decade.  In August 2015, Stephen was chosen to represent Wales on BBC2’s Great British Menu.

Now firmly established as a Welsh Indian Chef, he is proud to be representing Wales in India, after being selected to open a new restaurant back in Mumbai.  Set to open in April 2016, Chemistry 101 is an innovative gastro-bar where science meets magic!
